I
The tree
The safou tree fruits once a year. The fruit turns from pink to deep purple when ready.

II
The picking
Picked by hand when ripe. Halved, it shows pale flesh around a single stone. Fresh, it keeps only a few days.

III
The drying
Halved and laid on the racks of a dryer, the fruit loses its water. Dried, it travels far beyond its season.
